Curcumin
The yellow-orange pigment of turmeric (Curcuma longa), a polyphenol first isolated from the rhizomes in 1815 by chemists Vogel and Pelletier: used as a colouring, it is widely studied for its possible antioxidant and anti-inflammatory properties. This family brings together the active ingredient, metabolites, labelled standards and other impurities.
Did you know? Its chemical structure was only worked out in 1910 by Milobedzka and Lampe; as a food colouring it carries the code E100, the first on the European list of colours.
