Mannitol
A sugar alcohol found in a great many plants, algae and fungi, isolated in 1806 by the French chemist Joseph Louis Proust: in medicine it is an osmotic diuretic that lowers pressure in the brain and eye, in food a sweetener (E421). This family brings together the active ingredient, labelled standards and other impurities.
Did you know? Its name comes from manna, the sugary sap of the manna ash (Fraxinus ornus), named for its resemblance to the biblical food; in Sicily, in the Madonie mountains, it is still harvested today by cutting into the trunks.
