Natamycin
A natural polyene antifungal produced by the bacterium Streptomyces natalensis and discovered in 1955: it is used in medicine against fungal infections and in the food industry to protect the surface of cheeses and cured sausages from mould. This family brings together the active ingredient and other impurities.
Did you know? Its name comes from the South African province of Natal, where the soil sample it was isolated from was found; the molecule was originally called pimaricin.
