Proline
A non-essential proteinogenic amino acid, the only one with a secondary amine: its side chain loops back onto the nitrogen to form a ring, making proteins more rigid. With hydroxyproline it is a main building block of collagen. This family brings together the active ingredient, labelled standards, nitrosamines and other impurities.
Did you know?It was isolated in 1900 by Richard Willstätter and the following year by Emil Fischer from milk casein; its name comes from pyrrolidine, the ring that defines it.
